Kolkata Style Chilli Chicken

Chilli chicken is an Indo-Chinese dish but in Kolkata, the Bengalis prepare it with their own touch… Let’s make it!

Ingredients

i. Marination

  1. 1/2 egg
  2. 2 tbsp dark soy sauce
  3. 1/2 tsp ginger garlic paste
  4. 1/2 tsp pepper
  5. 1 pinch baking powder
  6. 2 tbsp corn flour
  7. Salt (to taste)

ii. Chicken coating

  1. 1/2 cup corn flour
  2. 1/2 cup all purpose flour
  3. 1/4 tsp baking powder
  4. Salt (to taste)

iii. Sauce

  1. 1 onion (diced)
  2. 1 capsicum (diced)
  3. 1 tsp garlic (finely chopped)
  4. 2 tsp green chillies
  5. 1 tbsp dark soy sauce
  6. 1 tbsp vinegar
  7. 2 tbsp tomato ketchup
  8. 1/2 tbsp red chilli sauce
  9. 1/2 cup water
  10. 1 tbsp pepper
  11. Salt (to taste)
  12. 1 tsp sugar
  13. Oil (for frying)

iv. 300 grams of boneless chicken (cut into cubes)

Procedure

  • In a mixing bowl, add all the ingredients for marination and mix well.
  • Pour half of the mixture over the chicken cubes and marinate well. Rest it for 30 minutes.
  • To bind the chicken, in a bowl, add all the ingredients of chicken coating and mix it until it resembles the texture of breadcrumbs.
  • Now coat the chicken nicely and deep fry the chicken until golden brown.
  • In a pan, add oil, onion, capsicum and fry until transparent. Now add sugar and cook until caramelized.
  • Add ginger, garlic, green chillies and garlic. Saute it for a minute. Mix well, and add the cornflour slurry.
  • Now add chicken to the pan and mix it well in order to coat the chicken evenly.
  • Granish it with some spring onions.
